Sorry, I hate to ask everyone's opinion on charging but I need help. I searched through the forum but most of the posts that may have answered my questions have been lost due to the forum crash.

I recently had a bride inquire to how much I would charge for 300 chocolate covered strawberries. She attended a wedding where I made the wedding cake and the grooms cake, which had the tuxedo strawberries. She already has someone doing her cake so only wants a serving tray of 300 tuxedo strawberries. I am at a loss as to how come about a price for her.

Any help would be greatly appreciated!!

I would say at least a dollar each!!! Definitely don't go less than that.......probably more like 2 bucks each!

At least $1 each. I've seen them in chocolate shops for $2 each. The process will be very time consuming, plus finding 300 strawberries in good shape will be expensive.

I do regular berries (dipped then striped in opposite color) for $2 each... Tuxedo berries are very time consuming - I wouldn't charge less than $3.50-4.

I charge $1.00 each for just PLAIN dipped strawberries...no fancy tuxedo or detailing. I would certainly think that $2.00 or $2.50 each would be expected...and 300 is a LOT of work and then picking out that many GOOD strawberries..you'll buy way more than 300 strawberries and not be able to use them for your purposes. Charge for the strawberries you'll NOT be using too! Now you may be up to $3.00 or more each. Wow..my prices just jumped up while typing this email. Good luck!

I sell mine for $2.25 each just for plain dipped. Tuxedo berries would be MUCH more.

Remember, you can't figure price on buying 300 berries. You're going to have to buy 500 or 600 berries to ensure that you will get 300 good berries for your event. Also figure seasonal pricing. A flat of berries from Sysco bought in March cost me TWICE what a flat of berries from Sysco cost me in May.

And I just saw another thread citing the increasing cost of chocolate (along with everything else!)

The restaurant where I work had -bride and groom- dipped strawberries around Valentines day - $8.95 for two strawberries (plus a little chantilly cream with Chambord in it). They were nice sized berries (although not the huge dipping ones) and the chocolate was just confectioner's coating, not the "good" stuff.

I've worked at other restaurants that charged $3 each for a dark chocolate dipped strawberry with just a little white chocolate drizzled over them.

The one thing you need to remember is that, especially off-season, berries are HIGHLY perishable - you can't do them ahead of time, so you may choose to charge a premium since you'll be up most of the night before making them.

Debi beat me to it.. For tuxedo berries this time of the year.. They would be $6 PER berry.. Not only are you going to have to buy a TON of berries to assure you have 300 decent sized and quality berries (the berries I have been seeing are teeny and not very nice looking right now and they are selling for $3.99 per pound).. but the tuxedo berries are a pain to make. I don't offer them out of season for these reasons. During the summer I charge $2 per berry for a plain berry dipped in firm ganache.. if I were to think about doing it now the price would be doubled. Plus dipping 300 berries the night before would be QUITE and undertaking. You can't do them ahead or they will be a weepy mess. If you do decide to do this.. don't wash your berries.. wipe them with a damp cloth to clean them. Putting them in water will make them get weepy much quicker than if you just wipe them.
