Ideas For A Chocolate Festival?

Hi everyone....my dh's boss (who is my biggest cake fan) is really pushing me to have a booth at a local chocolate festival in September. I know, it's a long way off, but I'm trying to get my ideas started. I wasn't going to do it, but I think it would give my business the push that I need. The booths are free, and there are close to 1000 people that come thru. I've worked the past two years at my dh's company booth for the raffle stuff since they are the biggest supporters of the festival. I'm planning on making a cake that I do called a Buckeye Cake (chocolate cake, peanut butter fudge like topping, ganache on top) to sell pieces of, but I'm lost on what else to do besides that. I'll be doing most of the work by myself, but will have help at the booth. I wanted to do chocolate lava cupcakes with chocolate wraps, but just don't know if that is realistic to make so many. How many different items should I offer, and how many of each should I take with me? I don't want to run out, but I won't make any money if I have tons left over! Any ideas on what I should offer? Any really good chocolate recipes? There are tons of people there selling chocolate lollipops and who have dip your own whatever in the chocolate fountain.

Thanks lasies. Cake balls don't seem to go over well in this area. I've made them several different time, and different ways, and people didn't really care for them. I've never made truffles before, but have plenty of time to practice, so I may do those. Any other ideas? I'm hoping to take 3-4 different items with me, depending on the difficulty of them since I'll be making most of it myself that week. Any ideas on how many of each item I should take? There were about 1000 people there last year. Thanks!

I know that you are doing a Buckeye Cake, but how about this regular Buckeye's? Peanut Clusters are real easy. Or some to die for brownie's?

How about anything mini? Mini chocolate cupcakes made with raspberry liquer (like D'Amore) as part of the liquid, drizzled with chocolate ganache. You could advertise them as "cakes with spirit". Same cake with Amaretto as part of the liquid would be equally yummy. Mostly, something easy for people to sample. Small is good, because then they could sample a variety from you and other booths. Let us know what you decide on. I wish I lived by you so I could go!

I may do some mini filled cupcakes. These are to sell, so I want to make sure to take things that would appeal to many different people. Thanks for the ideas!
