Cut And Shaping For A 3D Cake

I was wondering how do you cut the shapes you need for a 3D cake. Do you freeze your cake first and cut it while it is still frozen or what?

Most cakes work better if you're cutting them if frozen ... or at least that's my opinion icon_smile.gif

If there's a lot of cutting/carving involved, I freeze first. Makes the cakes easier to shape and less crumbs.

I freeze my cakes before I start carving them. And with the heat here in Arizona, I sometimes have to stick the cake back in the freezer if it starts thawing out too much before I am finished carving it. If you try to carve a cake that isn't frozen (or atleast it has been my experience with it), the cake will crumble much more than if it is frozen. Just my opinion.
