You guys live in Texas, I live in California. Everyone is always on a diet here. . .I guess it's based on your customer base. No one's complained (except for those certain "bigger" people) about the size; they've joked, but they didn't yell or scream. icon_lol.gif

Or maybe they like that I cut my cakes so small so they only have to eat a little because they think my cakes are gross. . . icon_lol.gif

I think the confusion with the serving sizes are that Wilton's charts are based on a 4" tall cake consisiting of 2 cake layers and I usually tort each of my layers so that I have 3 layers of filling. This is a BIG cake and you can get about 45 servings out of it. I cut my cakes 1"x2" and it's 4" tall so that's a really healthy piece of cake and not tiny at all.
If you look through some of Wilton's books at the individual cakes (I found the "Garden Slumber" which is a 9x13x2 sheet cake and it says it serves 28.
I'm not sure why Wilton doesn't put a chart in the back of their books for the single layer sheet cakes.
I hope this helps clear things up a bit.

Oh...oops I spoke too soon. I just found where Wilton has the 1 layer cake serving size. It says a 9x13x3" serves 23.

I'm sorry, but that's really offensive. People of all sizes like a big (or "normal", not 1/50 of a 9x13) piece of cake, not just certain "bigger" people. Thank goodness they didn't yell or scream at you, that would have been scary!! icon_biggrin.gif

Sorry it offended you; I put the "certain" in there because I wasn't including all the people that are "bigger" just the ones that do want more cake. And they really aren't bigger as in fat, but rather as in 6'4". thumbs_up.gif

Does anyone remember which thread had the picture of the sliced pieces of cake? I tend to go by wilton and it's pretty accurate. That's still a pretty big piece of cake at 4 1/2" tall! If anyone could find that pic I'd love to have it. It was a really good illustration!

Thank you soo much fmadds, now I see what I was doing wrong. I was trying to cut the pieces one at a time from the whole cake. You slice it lay it down then slice the smaller pieces. I always feel so dumb when I see how simple things can be if I would only look outside the box. icon_redface.gif

Nglez, if you are 15, I'm scared of you. If you know this much at your age now you are going to be one heck of a Baker. I don't believe you for a second that your cakes taste nasty.

I would love you to keep doing what you are doing and see you take over the Ace of Cakes. I can tell people "I knew him when he first started" icon_smile.gif

By the way, I'm one of those big people icon_rolleyes.gif What can I say, I have sugar running through my veins.

Anyway, I can live with the 28 slices for a 9 x 13 but I'm not ready for the 48. Give me time you may be able to get me to cross over. icon_lol.gif

I like the chart too. It's funny how diffrent the round is from wilton, but the squares are just the same. Yours is probably more like real people would cut a cake.

I hope the internet police don't arrest me for Spam, but I posted this in another thread, not thinking it would be more appropriate here. This is a size chart for rectangular cakes. It sets an industry standard on cake sizing and I use it often. Just wanted to share this with y'all.

1/4 sheet = 9 x 13 = 24 servings (Cut 4 down, 6 across)

1/3 sheet = 11 x 15 = 30-35 servings (Cut 5 down, 7 across)

1/2 sheet = 14 x 19 = 40-50 servings (cut 6 down, 8 across)

3/4 sheet = 2 11 x 15 side by side = 60-70 servings (cut 7 down, 10 across)

Full sheet = 2 14 x 19 side by side = 90-100 servings (cut 8 down, 11 across)

These measurements I use and find them to be most effective. It accomodates everyone's requests and it's easy to determine how many people it will feed (as well as teaching the customer how to cut their own cake!)

Yes, thank you for that information! I have most often heard half sheets as the 12"x18", I didn't even realize they had a 14"x19"!! Are those widely available? It won't fit in my current oven, but the new oven is sitting patiently in the storage area waiting for the kitchen re-do and it will fit in there! I'd be interested in offering it to my customers.

Also, just for comparison, I typically tell people to cut the 11"x15" into 40 pieces... 5 across, 8 down. That is for somewhat generous pieces that actually make you feel as though you've had cake. If they are serving with a full meal, they can cut as small as they wish, but for those who hunger for more, that's my suggestion. icon_wink.gif It is definitely true that you are probably going to cut smaller slices in a more health concious area, where they are looking for a tiny sample, rather than a hearty serving.
