Anyone Else Had This Problem?

This isn't a cake disaster, but I didn't know where else to post it. I have a question for y'all -- I work with gumpaste (at the beginning of my gumpaste career you might say) and yesterday I used the CK Products "Gum Paste Mix" in a bag. I made it a couple of days ago according to package instructions. Made up the whole bag in fact. Wrapped it tightly, put it in an airtight container and let it sit in the frig for a couple of days. Yesterday, I made some calla lilies out of it, rolling it quite thin (1/16th of an inch -- the thickness of a dime or a tad thinner), and what I got was a very stretchy dough which lost its shape when I removed it from the board and/or when I put it on the pad to thin the edges. I also had a bad problem of frayed edges from the cutters. Now I know what you are probably thinking -- are they new cutters/board, etc. No. I use the same board as Scott Woolley and I've had these cutters for a while now. In the past I've used a 50/50 dough rolled thicker and I've not had a problem like this, but in this case I wanted to go straight gumpaste and have much thinner petals. The calla lilies look okay, but they aren't my best. Has anyone had problems with the CK Gumpaste Mix? If it isn't the mix, does anyone have a thought on what the problem/solution might be? I'm still trying out gumpaste recipes to see which one I like the best. So far this one's a dud. Any thoughts anyone?? Thanks in advance!! icon_smile.gif

I personally don't care for the CK gumpaste mix. I do like Satin Ice gumpaste, that seems to work quite well for me. I just bought Wiltons pre made gumpaste, but haven't had a chance to use that so i can't comment on that, i do hope that that one will work well as the price is much better then the satin ice.

I have for a nice usuable gum paste, used wiltons fondant and added tylose to it, about 1 tablespoon per box, just mix in and let rest like homemade paste, seems to work well, and can be worked right away if needed.

As far as your cutters not cutting nicely, they may have become slightly misshapened in storage, but don't worry even if they have you don't have to go out and buy more. What i do is when cutting my paste i wiggle the cutter around so that the edge cleans up, if the cutter is really off i will cut the paste by laying the paste over the cutter and running my finger accross the edge to get a nice cut.
