How long can I freeze cake? How do I defrost?

I froze a cake for the first time. I hope I did it ok! I wrapped in saran wrap, then foil. I froze it yesterday and the cake is for saturday. Will it be ok in freezer for that long (6 days)? How do I defrost the cake? Do I do this friday or the day of the party (saturday)? I'm afraid it's going to be hard!

Sure it will be fine! I try not to freeze a cake for more than a month.

Just throw it on your counter in the morning and depending on the weather, it will be ready in a matter of hours. Then unwrap and decorate.

I would take it out Friday morning, decorate Friday night, and bring it to the party Saturday.

I take it out of freezer friday morning. Leave on counter, unwrapped. And ice it on Friday night.

Also, I want 2 layers, so will I level the cake while it's still frozen or after?

I personally level my cakes before I freeze them...that way all I have to do is unwrap/unthaw and i'm ready to decorate.

You leave it all wrapped up on the counter. If you unwrap it the cake will dry out. Just take it directly out of the freezer and throw it on your counter.

I level after. I think the outer edges of the cake keep the moisture in and protect the cake in the freezer. Kind of like when you slice bread the first piece is always tossed. I think of it as the top level part as that first piece of bread that is tossed.

You can leave the cake unwrapped to thaw. It will not dry out. I've thawed cakes wrapped, and didn't like how soggy they got. It does need to be covered after it is thawed though. But if your cake does dry out slightly, it is nothing that the moisture of the icing wont replace. I also trim before freezing and all my cakes are great. Just don't try to level your cake while it is frozen solid. It is difficult to cut through and you have to work much harder at it then when it's thawed. Not to mention dagerous when your knife suddenly breaks free from the cake while you where trying so hard to push it through.

I have never left a cake in the freezer for more than a week or so...but...my gramma used to make THE BEST chocolate cakes ever and she would purposely freeze them for a few weeks before we ate them b/c it made them more moist!!
