Hello all. I feel like making some NFSC cookies today. Unfortunately I only have one egg icon_surprised.gif , and no form of transportation today. I do have some egg substitute though; would it be ok to use it in place of one of the eggs? Will it mess up the texture or anything? Has anyone done this?

I did, used 1/2 cup of All Whites brand egg whites in place of both eggs, and the cookies came out fine.

You sure can. I used Egg Beaters with great success! I use it all the time in my baked goods.
