Cupcake Question Regarding Baking On Multiple Oven Racks

I have an order coming up for 850 cupcakes for a hospital's 40th anniversary....started out at 700 and has gone up. So, here is my question...I have a traditional oven and have only used the middle rack to bake...ever. Can I back two (dozen each) pans on two different racks without burning? To do this, should I drop the oven temp? Reduce baking time? I'm just thinking of ways that I can get this done on time and efficienty, like most of you, I work a full time job along with my full time bakery business from home, so baking/decorating time is at a premium.

I've baked two pans (12 each) on the same rack next to each other (there was enough room on one rack with space in between the pans). I wonder if you could do 4 trays and get 48 done at a time.

I'm afraid to bake on two racks too! I only bake one tray at a time of cookies and it takes forever! I have a full-time job as well. Where is that winning lottery ticket?!?!

HI I always bake on 2 racks. cakes, cookies etc ! all at the same time! I do bake everything at 325% though . I have never had a problem ! I always fill my oven as full as I can ! And its just a traditional oven ! hth SOME !

I do a lot of cupcakes and I don't have a very large oven. Two 1 dozen muffin tins will not fit side by side. I always use the two racks, I bake at 350 for exactly 19-20 minutes and the cupcakes come out perfectly. Good luck with this project and let us know how you make out.

I too bake on both racks, move the top one up one notch and that way neither will be too close to the bottom. Also I would start now, bake cupcakes, cool, individually wrap in saran wrap and then put 1 doz in a zip top bag and freeze, the turn out wonderfully moist and don't take long to thaw. Just leave wrapped up until thawed so condensation will stick to the wrap and not the cake. icon_smile.gif

Be sure the oven is preheated, because if not the heat will have a hard time circulating around the top rack ( i hope this make sense) icon_smile.gif

I bake alot of cupcakes also. I bake on 3 racks at 325 for 18 minutes. Works fine.

On Good Eats I learned that the most important thing for baking cakes is sitting what your baking exactly in the middle of the rack that it is on and not having any baking pans touching each other.

It doesn't seem to make any difference if which rack they are on, they all bake the same.

depends on your oven, you might have to rotate to keep them baking even. But i have always loaded an oven, never thought not to. Even when i had a small traditional oven.

Thanks so very much everyone! I'm going to get that oven cranked up and going as soon as the race is over. LOL. Thanks again!!!! I'll be sure to post pictures of the massive display once they're done. (My husband is working on a 6-tiered cupcake tower as we speak and it's looking amazing!) We're estimating this one holding no less than 200-225 regular sized cupcakes. Wow! It's going to be a whopper to set up. LOL.

Right now...Jimmie Johnson...Ugh! LOL.

Another question...when baking cakes on multiple racks, do I need to drop the temp for them, as well?

You can see that this little bit of knowledge has got me ready to knock out some serious cakes! LOL.

I always bake at 350, I know that my oven will cook my cc's perfectly in exactly 19-20 mins.

AI think it depends on your oven. Anything that gets baked in the center towards the back on my top rack always turns brown before everything else. Do a test run to find out! Xoxo
