Big Problem,i Need Immediate Responses!

I've made three cakes since Nov. 18. The first and second were icecream cakes and I got rave reviews. The first one was for my nieces's bd it didn't last a full two days. The second one was for my friend and her son (same bd and she was there to taste my niece's cake, she's a icecream cake fiend who only buys them from one bakery)She told me that it was better than her fav. Well her cake was made on Dec. 4, yesterday I went to her house and she still had enough cake left for four pieces. When I tasted it I tasted a mediciny mint taste (nothing mint was added to recipes, icing was yellow with same flavor as cake) I made a cake this past Sat. 12/16 (different flavor not an icc) rave reviews again. I didn't taste the cake until this morning 12/18 just a small taste and I tasted the mediciny mint taste again.

Now keep in mind that I am making these cakes to get any type of feedback to determine whether these recipes are hit or misses, should they stay or go or can they be approved upon and how. So I gave slices to family, friends and neighbors. I am asking all the right questions about texture, taste and I am asking for ratings 1-10. All 10 ratings. My mother ate her last piece last night and called to praise it again and wished she had more (she wants me to make her another one for the holiday) I asked her this morning if she noticed this taste when she ate her last piece she said no she would have told me, and that's what I figured.

So by day three (based on the cake I just made Sat. and the fact that the icc from 12/4 had that taste too) this taste occurs. Why?

All of my ingredients are fresh, brand new extracts exp. 8/10. What's going on?

I can't say about the first icc because it didn't last past two days; but the only thing different that I did with that cake compared to the last two was that I covered the cardboard under the cake.(sometimes I am busy, distracted or too tired to remember) All three were put in cake boxes. I've noticed that the more cake I cut, the board is very oily even the board from the icc I seen yesterday, could this plus staying in the box be the culprit? I have to get down to the problem quickly, I can't have this happening! From what I remember, before I got interested in cd and I would make cakes occasionally for the house I would put the cakes on cakes or covered boards and I don't think I had this problem.

Strange. Did you use any of Wilton canned spray colors on the cakes? I think they have a terrible chemical mint taste to them. I only tried the red spray once and threw the rest of the can in the garbage.

1. It could be the board. Try to remember to cover the board so that no taste will seep thru to the cake. 2. Most icc are ment to be consumed that same day and not to be left over cake. Ice cream needs to be tightly covered and air tight to save the taste. HTH>

I cover my boards or get waxed boards 'cause I sure hate a greasy lookin' board....makes me think too much about the rest of the stuff that's goin in my mouth! outta sight, outta mind!

This might be personal, but could you be pregnant? Since you are the only one who tastes it , i thought that could be the case. Or it could be that we are so in tune to what we make that we notice things alot more than others....but i have no idea what the mediciny mint taste could be

It could be a number of things but simple things. Check the fridge for what is in there... Even though being stored in the freezer, smells, and tastes travel to the freezer section as well thru the cooling system. Just like with other things that obsorb smells and tastes ice cream does too.... so it could be something that was in the freezer and not sealed properly putting off a smell, or it could be something in the fridge like fresh herbs or veggies etc....

As stated above, ICC aren't meant for keeping they are meant to be consumed quickly which is normally why they are so small... Also maybe buy a small one from the grocery store or at least check them out and see what their packaging is like.... it could be something that you covered the board with isn't meshing well with the freezer temps or the ice cream itself...

No Ge978 I am not pregnant. I am thinking that it's just me since I am the only one who has tasted it on the third day. I won't let anyone else taste it until my daughter does. If she doesn't taste it I'll let someone else taste then we'll know.

She just had the icc in the box in the freezer, I don't know if she had it in plastic before she took it out the freezer. She's a funny person and while we were eating this cake yesterday she never said anything about it having a taste. The cake I made this past Sat. was not an icc so no freezing required.

did you use toothpicks to hold flowers or something? Some toothpicks have a minty taste, maybe that could be it? Or did you brush your teeth, just before eating the cake? Maybe some residue of mouth wash (is that what it is called?)

I forgot to add, that Sat's. cake only got this taste today the third day, anyone who tasted it before today didn't taste it.

This last cake I made Sat. never got refrigerated, it stayed in the box on an uncovered cake board.

Only the standard ingredients and flavors(everything was brand new & fresh exp. dates no where near) went into this cake it was just iced with white bc. Nothing minty went into this cake. No mint flavored toothpicks either.

Yummy - have you had a cold or allergies and perhaps taking some kind of medicine that might leave a taste in your mouth when tasting certain foods??

No colds, no allergies, no toothpaste nada!

Thanks to you all for trying to help solve my problem. Everyone is trying to guess, none of the above are the case. Let me tell you what my thoughts are.

If all of you who answered use fresh ingredients,
cover your cake boards and occassionally leave cakes in the boxes for several days unrefrigerated and never have my problem; then I am really starting to think that it's me not covering the boards( like I said I was distracted and forgot) they sure were oily( like all the moisture was sucked up by the cardboard.

I called McCormick's ( I used their pure v and al) and told them what I was experiencing they couldn't figure it out either.
