Rosettes?

So my cousin was telling me today that she bought four Rosette cookies for five dollars! I thought she was crazy. I remember making them way back when----As far as Temperature I have a candy thermometer and a meat thermometer but what kind should I use for oil?? Also what kind of oil should use??
I also lost my handle for the molds--GRRR so I bought a new one--Guess what it does not fit!

I would use a candy therm. for oil.
