Mix 1/2 cup splenda per ounce of unsweetened chocolate, and you can add whatever you like (nuts, unsweetened coconut, etc.) to make candies. For truffles, just substitute unsweetened chocolate for your semi-or bitter-sweet in your regular recipe and cut down on the sweetener in the above formula to taste.

I just bought a bag of sugar-free white chocolate at my local cake supply. They tell me it melts really well. I think I might be making pour boxes as gifts, and am looking forward to trying a sugar-free one...
