I have baked many cakes in my life but just recently the cakes I have made (even the cupcakes) had holes in them or air pockets. Does anyone have any idea what might cause that? Could it be the eggs?

the cakes still come out very good but a little spongy.

Do you tap your pans on the countertop before placing them in the oven? When we mix our batters, air bubbles will form in the mixture, and they need to be knocked out before baking.

no i don't and I never have but I guess I could try that, it makes sense. Could that help even with the spongyness???

I get a little more aggressive than taps-I always give the pans a good couple of whacks on the counter (flat on counter, not over edge-this could dent the pan) before baking. Lots of air bubbles come to the surface.

It sounds to me like you are overbeating your mix. Are you making the cake from scratch or a mix?

It also sounds to me like you're overbeating it. The info in this thread may help you:
