Blueberry cake filling recipe- PLEASE

Hi-
Does anyone have a blueberry cake filling out there that can be used to fill a layer cake that will be iced, etc? Inlaws Anniversary coming up- very special cake... he loves blueberries (can't find a blueberry cake recipe that can be iced- so thought I'd use blueberry filling)

Can anyone please help? icon_sad.gif

PS: I do not use gelatine, so if you have one without it- it would be VERY appreicated.

For the cake itself, use the extender recipe but use the blueberry coffee creamer in place of part of your liquid. Or, make the extender with a white cake mix, make some cream cheese icing and fold some blueberries into it to use as a filler. Is that kinda what you're thinking of?

I should have mentioned that I don't use boxed mixes. icon_confused.gif

I'm relatively new to decorating and have a limited number of cake recipes thus far. But I'm willing to learn. icon_smile.gif

The extender recipe does indeed use a cake mix. It's in the recipe section here under cake mix cakes. You add additional flour, sugar, egg, etc. But if you don't use mixes, you could just replace part (1/2 or 3/4) of the liquid in your scratch cake recipe with flavored liquid coffee creamer. I haven't used the blueberry flavored but one of the other CC members said it was really good in cakes! Let me know if you have any more questions!!

put in about 2 Tbls. powdered (or replace 1/2 of the liquid called for in your recipe with liquid) blueberry cobbler coffee creamer. You can do this in your cake and/or icing also try a small box of vanilla pudding with 1 1/2 c. liquid creamer instead of the milk for a filling.

This makes for one yummy cake!

I used the raspberry filling recipe here on CC. It didn't use gelatin and it was awesome. I would think that blueberries would work the same. If you can't find the recipe, pm me and I will send it to you.

I just use frozen fruit (raspberries, strawberries, blueberries) boil them with some water & sugar & thicken the mixture with cornflour. I use canned, crushed pineapple if doing a pineapple filling. They all taste really good.

Now I'm so excited to make this cake!!! I've decided to make it a white cake so the blue really stands out when it's cut open.

I did a wedding cake with blueberry filling and used the all fruit spread that is in the jam and jelly section. I used the one in the tall, small jar (can't think of the brand right now icon_confused.gif ) but is all natural and is sweetened with fruit juice. You can mix some in with BC icing if you want something a little fluffier.
