I'm wanting to make many many Christmas cookies ahead of time and am looking for some tips on which types of cookies freeze well and which do not. My mother has always followed the rule that "anything can be frozen" but I've noticed her frozen then thawed cookies are not always the best. Others, however, taste just the same as out of the oven! So what are some basic guidelines for what to freeze and what to make fresh at the last minute?

Here's a site that will help
http://www.baking911.com/cookies/storage.htm

I freeze a lot of what I bake (cookies, brownies, cakes). I always let the item get cold first in the refrigerator. For the cookies, once they're nice and cold, I wrap tightly in plastic wrap and then place them in a freezer bag and remove as much as possible and stack neatly in the freezer. If it's only a few cookies or for a few days, instead of a freezer bag, I'll wrap them in plastic wrap and then foil.
Also, some cookie cook books give advice for freezing cookies. I've noticed that everyone says pretty much the same thing.
