Hi all

Have any of you made a cookies and cream cake? I was thinking of using classic white cake mix and adding crushed cookies to the batter before baking. Then, I would fill with buttercream that has crushed cookies mixed in. Do you think that would taste good? Also, should I use 4 egg whites or 3 whole eggs for each box of cake mix. I am making this for 40 people. 4 boxes should be enough right? I will put it together using 4 9x13's stacked next to each other to produce a 13x18 double layer cake. thanks!!!!!!!!!!!!!!!

Hi! I would think that 4 boxes would be enough, especially if you're using the extender with them. I've never put cookies in the batter so I cannot tell you how that will affect baking time or cake texture, etc. I have, however, done the vanilla or chocolate cake with cookies crushed in the buttercream for filling. I mix it pretty thick so I'm able to put a good bit of filling, which I like. It's a popular flavor for me.
