So, I tried making hard candy for the 3rd time over the weekend. The first two attempts failed (candy canes both times). This time I was trying to make candy that looked like ice cubes. I thought I'd use a heavy plastic mold my in-laws had, and since I was told that corn syrup turns kind of amber when it is boiled, I thought I would try colouring the ice cubes with just a little blue. Well, they turned dark green. >:| And I burnt them.
I thought, this would be so much easier if I could find clear corn syrup. Wouldn't that be so fantastic? Then DH who used to work in a grocery store tells me that it does exist, and it's called light corn syrup. This is the stupid part....I assumed the stuff I was using was light because it was a lighter yellow than some of the stuff I had seen. Duh. I felt like a tool!
But my 4th batch of candy did turn out! A little yellow, but better than dark green!!!!

Karo Syrup makes a clear syrup icon_smile.gif I used it once to thin icing for writting. icon_smile.gif

Karo is not available in Canada...but I did find something called Lily White Corn Syrup by Crown. icon_smile.gif

You were bound to get it right sooner or later. Wish it could have been a little sooner for you, but hey as long as it happens, right?
