I add 1 egg and 1/2 cup oil to the boxed cake mix to make the "dough". According to what kind I am making, I will add nuts, chocolate chips, butterstoch chips, etc. Use your imagination!

I'm planning to try this low-fat recipe this weekend.

Macaroons
1 box white angel food cake mix
1/2 cup water
1 teaspoon almond extract
1 package (7 oz) flaked coconut (2 cups)
1 tablespoon unsweetened baking cocoa

1. Heat oven to 350°F. Cover cookie sheets with cooking parchment paper or foil. In large (4-quart) glass or metal bowl, beat cake mix, 1/2 cup water and the almond extract with electric mixer on low speed 30 seconds. On medium speed, beat 1 minute, scraping bowl occasionally. Fold in coconut.
2. Drop half of the mixture by teaspoonfuls about 3 inches apart onto lined cookie sheets.
3. Bake 7 to 9 minutes or until light golden brown around edges. Cool macaroons completely before removing from parchment paper.

High Altitude (3500-6500 ft): Stir 2 tablespoons Gold Medal® all-purpose flour into dry cake mix. Beat on medium speed 3 minutes. Bake 9 to 11 minutes.

Duncan Hines Chocolate Fudge cake mix has a recipe on the side of the box for Double Chocolate Chip cookies that is wonderful!!!

You just add 2 eggs, 1/4 cup of brown sugar, 1/2 stick of butter, 1 tsp. vanilla, and 1 cup of chocolate chips.

I add 1 stick melted butter and 1 egg (and any nuts, chips, add-ins), mix to form a dough, roll into 1" balls, slightly flatten, and bake at 350 for about 8 minutes. I like to add chopped cherries to a white cake mix cookie and then add the cherry juice to some buttercream for icing...yummy!

There are lots of sources for cake mix cookie recipes. There are a couple of books, including 101 Things To Do With A Cake Mix and The Cake Mix Bible. You can also find them online. Here is one link:

Tried the above one past weekend. I for one did not like it at all... The cake mix was too sweet, I normally don't like the cake mixes but if you are into it, maybe u'd like the recipe. It was pretty fast to make though.

Really quick and easy:

1 box mix
1 container Cool Whip
1 egg

Mix together (will be really sticky). Roll in powdered sugar. Bake 8-10 minutes at 350-375.

Another one:
Mix one 15 oz. can pumpkin with any cake mix. Spreak in 13x9 pan. Bake for 25 minutes at 350.

I love this thread - I'm going to try these types of cookies in hopes they will stay soft and chewy. Everytime I bake chocolate cookies the next day they are usally ROCK hard even though I put them in a tupperware bowl....so I just stick to baking cakes instead of cookies. icon_sad.gif But I'm now willing to give these recipes a try.
