Can you refrigerate Cake batter?

All,

I was wondering ...

What do you do when you only have 1 pan and need to make it two layers? I bought the heart set, and was thinking that one of the hearts made to 2 layers would make a nice cake. However I only have 1 pan of each size. So what do I do? Can I make the batter, bake 1 layer, and put the batter in the refrigerator until the first layer is out and the pan washed? That would probably be about an hour. Will the batter get messed up waiting that long?

How do you do it?

If I have any batter left over, I do refrigerate it for a short time until I can get it baked. When I mix the batter for the second cake, I mix the refrigerated batter in along with the "fresh" batter that I just made. That way the whole batch will be an even mixture. I have had no problems so far. I just hate dumping perfectly good batter.

I just let mine sit on the counter cover with towel, The batter only sits out for 40 minutes and I have never had a problem

I don't put my leftover miox in the fridge at all. It never occurs to me.

Then again, I have more than one pan of most sizes. Don't be afraid to mix and match sizes for a "3d" effect.

I have never had the problem of only one pan. I know if I have left over batter I leave it on the counter covered. When the cakes are done I use the left over on cupcakes for the kids, never had a problem
