Do you wrap in saraan wrap and put in fridge or just leave out...I am not putting icing on them till tomorrow....I am asking cuz it just get warm in my house..but If I put in fridge I dont want them to get hard......

I have baked cakes on a Wednesday for a Saturday wedding I had to travel to out of state, and they were fine, but I had also decorated them on Thursday so I was able to seal them in.

If your house does get hot, I would recommend you wrapping them very well in Saran wrap (do not wrap too tightly or you will smash the cake), and put them in the fridge. You can also place the wrapped cakes in some garbage bags (clean of course) or the XL Ziploc bags to further protect them from any odors in the fridge. They will be fine.

I had a bridal shower last weekend and I baked my cakes on Tuesday and Wednesday, wrapped them well in saran wrap and tin foil, then put them in the freezer. I find refrigerating my cakes makes them very dry. Freezing them seems to 'lock' in the freshness and the moistness of the cakes. I made my icing on Wednesday and stored it in plastic containers until Saturday. I didn't put the icing in the fridge but you can.

When you want to decorate your cakes, take them out of the freezer and let them thaw out alittle bit. Then carefully unwrap them and start decorating. I also find when cakes have been frozen, they are alittle more stable then just baking and decorating the same day.

I always refrigerate even if its just over night. Never had a problem with it drying them out. They will get hard in the fridge but its only til they come back to room temp then its just like when you put them in. I find them easier to level and tort straight from the fridge. I use plastic bags, like we did when I worked at the bakery, but I'm sure you could wrap in saran.
