The answer is really going to depend on lots of things-skill level, difficulty of the cakes, amount of workspace/storage space you have to accomodate cake, number/size of ovens, etc.

With a business you also have to look at the number of bakeries in your area, what type of bakery it is, the population, an estimate of the number of weddings that may occur, etc

I couldn't even guess, never thought about it b/c I stay so busy. I work full time and bake when I get home.
But I came up with 2 wedding cakes, 2 bridal shower, 1 50th anniversary, about 130 assorted (layer cakes, cheesecakes, poundcakes) 18 dozen cakeballs for Thanksgiving.

2006 I was just getting started and really just word of mouth here and there, so I did, hmmm...

3 big paying weddings

1 wedding cake class cake

1 large dummy for the fair

1 freebie 2-layer practice went to neighbors

15 going on 19 dummies for bridal fest in Jan.

1 graduation

3 birthdays

1 cheesecake

several for us at home...

Total: 23 wedding cakes or dummies

5 other

so...28, all paid except dummies

Another name for a Groom's cake should have been a
"Dummy" cake. icon_biggrin.gif

Ok, just going through my photos I have 39 special occasion cakes (birthdays, showers, etc.) give or take a couple and I have 3 wedding cakes and 1 grooms cake. I'll have 3 more special occasion cakes and 1 more wedding cake by the end of the year!
Wow, I didn't think I did that much!

over 40 weddings/events (cake and catering); about a dozen special occasion sheet cakes (including 2 that served over 100); 2000 dozen cookies. (The cookies were done inside of a 4-month period. I then canceled the contract due to time limitations.) Plus a full time job.

34 plus 1 wedding and I still have pending orders for the end of the year. Not bad for working out of my little tiny kitchen. Goal next year is 50 plus 4 weddings, already have 1 wedding booked and 2 pending decision on wedding date.

yes, a dummy cake is styrofoam -- it has nothing to do with a groom's cake, only that they did this "fake cake" instead of a real cake for looks--understand?? icon_smile.gif did i make sense
