I've died and gone to heaven!

Thanks so much for that link...I've been trying to get a PROFESSIONAL FORUM going..because we have "other" needs as far as the hobby or casual baker have..

Bigger yield recipes...equipment...Gov't agencies that sort of thing...lol

Sigh...maybe one day! lol

I have dealt with this company many times over the past few years. I love their products - there are several products that they sell, that are difficult for a home baker to acquire without a business license -- and their customer service is unbeatable. Fast delivery, without fear that something is broken when you open the box.

When I started training myself in pastry arts (there is no school near enough to me), I used their formulas (what we call recipes) to teach myself, before I bought the culinary school textbooks.

You are correct in refering to them as "FORMULAS" when you deal with quanties this large you use the baking formulas to increase and decrease for yields.

Baking math is the ony math that give you a "BAKER'S PERCENTAGE" and it NEVER adds up to 100% !!! lol

Go figure!!??
