Size Help!!

I need to make a wedding cake for the 21st and I'm having trouble with the sizes....It needs to be a three layer square cake....It needs to feed 150-180 people...AND they are eating the top layer...

Please Help!!! Thanks

Ok top secret info here... JK I use Wilton's cake chart then reduce the servings by 20% to get a more generous serving size. I only charge for the reduced amount of servings. Also for a cake that large I would use 3pans/layers per tier so it will be a nice tall cake but not too wide. Do the math based on a single layer x 3
6 inch cake serves 18 or 9 for single layer x 3 = 27 -20 % = 21
10 inch cake serves 50 or 25 for single layer x 3 = 75 -20% = 60
12 inc cake serves 72 or 36 for single layer x 3 = 108 -20% = 86
14 inch cake serves 98 or 49 single layer x 3 = 147 -20% = 117

Total of three tiers 6, 10, 12 each 3 layers tall = 167 now if that seems like too much cake it truly depends on how good the cake is icon_lol.gif I always recommend ordering for 25% fewer guests than expected. Hope this helps & makes sense? Always works for me w/o clients saying they got too much cake!

Do you mean you make cakes that are 6+" tall or are you talking a torted cake?

Yes our cakes are 3 layers per tier so 5-6 inches average. We also torte most wedding cakes. Our clients are always impressed with 6 layers of cake & 5 layers of filling per slice. That is how I would want my cake to be so it's what we give them. It only takes a few extra minutes to torte, yes with a knife, and is as you know makes the cake more moist & delicious.

As for the three layer cake, the servings are more so the ingredients are more but the math adds up close to a wide cake. I love the look of a tall cake rather than short & wide. I don't like to bake & work with anything over 14 or 12 if I can, so I make the cakes taller.

Of course for smaller weddings we can scale back.
