Contracts are generally used for larger orders and wedding cakes. Earlenescakes.com has a sample she makes available to use and adjust to your own needs.

I don't own a business, but just from watching Judge Judy I know that you need a contract! haha. Seriously, you don't want anyone to take advantage of you. Be as specific as possible and give them a copy, too. Good luck!
