Hey I just found this and thought it was really cool - it's a place called Vocation Vacations. You pay to go and watch & train in a business of your choice for a few days. There's one for a pastry chef & chocolatier in Chicago : http://www.vocationvacations.com/DreamJobHolidays/sarahs-pastries-and-chocolates.php

Sounded really cool! Gives you an idea of how that type of business runs without jumping in on your own!

I also thought this might be good to mention to those of you who do have a legal business b/c I guess you could sign up to become one of these mentors and get some extra cash!

I am not affiliated with this program in any way - just came across it and thought it was cool, so I thought I'd share. It's not cheap - but it doesn't seem any more expensive than going to ICES or another cake convention or taking classes from any of the cake pros - hmmm wonder if we could get Collette or Mike or anyone to join in on this??? icon_smile.gificon_smile.gificon_smile.gif

Very interesting! I guess the price isn't excessive for one-on-one training. It's work thinking about!
