I am looking for any creamy fudge recipes. I have the Mamie Eisenhauer, etc. but they get grainy after a day or so. Anything wonderful to share that will keep well for the holiday? Thanks. icon_lol.gif

I don't know too much about candy making but I have a book that has a recipe for Cocoa Fudge and the description says:

"A good basic chocolate fudge. The use of whipping cream or non-dairy cream substitute makes stirring unnecessary. This makes a very creamy fudge." (The Candy Cookbook by Mildred Brand, p.24)

Rachael Ray's 5" fudge is very nice and creamy. There are many similar versions and I have modified it for what I have available at the time.

12 oz semi-sweet chocolate chips (I have subbed other ss chocolate)
6-8 ounces milk chocolate chips (RR's used 1 cup butterscotch chips)
1 can Sweetened Condensed Milk (like Eagle Brand)
1 tps vanilla
add nuts etc as desired.

Melt the chocolate, stir in the milk and vanilla, add whatever
spread in a parchment lined (easy removal) 8" square pan
Chill and store in the fridge.

This stuff is fabulous!

Here is one I use all the time.
Boil for 6 1/2 - 7 min
4 1/2 c sugar
1 can evaporated milk (13 1/2 oz)
stir constantly

Place in mixing bowl:
1 lb butter
3 tsp vanilla
1/8 tsp salt (i never use it)
18 oz choc chips

Pour boiling mixture over ing in bowl. Stir until butter is melted. Beat with electric mixer vigerously for 4-5 min til very smooth. Stir in 2 c walnuts. Pour into a buttered 10x15 jelly roll pan. refrigerate til set.

I use 3 cups sugar, 1 1/2 sticks butter, 1 small can of cream, bring to boil and stir until it reaches 234 on candy thermometer add 1 cup peanut butter, 1 jar of mm cream, and 1 tea vanilla mix well and pour into a 9x13 pan greased with butter. wait until it cools. you can use chocolate in place of the peanutbuter. 1 package of milk chocolate. also add pecans if you like we love peanut butter. icon_biggrin.gif
