I don't know how good you are with sculpting and fondant. But how about the replica of the church itself.
Just an idea.Or if you want to go simpler than that, maybe a sheet cake with open bible on the top(with some bible verse regarding the subject).
Hope this helps some.
Good luck and let us know what you have decided.

A replica of the church is a great idea! If you're looking for something simpler, maybe a scroll type cake to look like a mortgage or lien. When it is cut to be served it will symbolize cutting up, or being rid of the mortgage payment. Just an idea. Hope this helps.

You could do a sheet cake with a mortgage paper on top out of fondant and have the paper edges appear to be on fire.

How about a sheet cake that looks like a mortgage deed with lots of writing (ie: date the loan was taken out, address of property, name of bank, name of church) scripted across the entire cake. On top of all the script stamp a PAID IN FULL notice in large red letters.

wow thank you all so much.. I do love the idea of a sheet cake with the mortgage paper on top.. I'm not really good with fondant but i'm sure I could roll it like a piece of paper.. I love the idea of the the writing on the paper and really love the ends of paper burning.. how would I make the ends of the paper look like its on fire?.. and the sheet cake, i would just cover that in buttercream? thank you all so much .. all the ideas are awesome..

I did a search for flames and found this example. I'm guessing they used colored candy melts. You could always PM them and ask exactly how they did it. You could place flames like these on the sides or ends of the sheet cake with the paper mortgage on top.

I want to thank all of you for your ideas and your kindness.. I was playing around with the fondant last night to see if i could make it look like a mortgage note.. and this is just a rough draft but do you think this looks ok.. I will have it on top of the sheet cake that will have flames on it to look like its burning the paper.. let me know what i should change or improve.. thank you .. God Bless... Theresa... well i couldn't get it on here.. i don't know how to get it to fit.. so i'm going to post it in my pics.. if you don't mind would you look and see if i need to change anything before i make the real one.. I really want to thank you all again..

I would keep in covered. As fondant dries it becomes more brittle. When you try to take it off the mat to place it on the cake it will very likely crack or crumble. I made the mistake of letting my stethoscope sit out uncovered while I finished up my last cake and when I picked it up to place it on the cake it broke in a few places and I had emergency repairs to do. (It's in my photos if you're interested.) So, anyways, I'd keep it covered, it will be easier to transfer. I'm sure it will be a hit Sunday!
