I've read lots here about how yummy Nutella is as a filling. I tried it last night, and had a really hard time getting it to spread. Is it straight Nutella, or do you mix it with something? Thanks for any tips you may have.

Here's some info. I have collected. Mostly from these great folks here.
Here you go:

Nutella mousse

Whip up 2 cups of heavy cream (or Pastry Pride), 3 tbsp of confectioners sugar (may not need the sugar with Pastry Pride) and 1/4 teaspoon of vanilla, then gently fold in 1/2 cup of Nutella (other chocolate-hazelnut spread can be used). Makes 4 1/2 cups.

Nutella Glaze
Ingredients:
1 cup Nutella
1/2 cup powdered sugar
6 tbsp boiling hot water
1/2 tsp rum extract
Instructions:
In a mixing bowl, combine Nutella, powdered sugar and hot boiling water. Whisk together until smooth, stir in rum extract then drizzle over cooled cake. yummy

Nutella Ganache
8 ounces of Nutella
1⁄2 cup heavy cream
Directions
Melt the Nutella and heavy cream in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.

Chocolate Nutella ganache: Heat 1/2 cup of heavy cream to boiling point. Remove from heat and stir in 3/4 cup dark chocolate and 2 Tb. Nutella. Let stand 2 minutes.

Nutella Icing
1/2 cup nutella, hazelnut cocoa spread
1/2 cup vanilla icing
Combine the Nutella and vanilla icing until well blended and a medium-brown color.

Nutella Whipped Frosting
13 ounces nutella
12 ounces fresh whipping cream
1/2 teaspoon vanilla extract
Empty nutella, whipping cream and vanilla extract into the bowl of your mixer, and beat (slowly in the beginning to avoid splatters) on medium-high, scraping sides and bottom of bowl with rubber spatula occasionally, until you have billowy clouds of chocolate-hazelnut cream.

You can also use your BC and mix it with 1/2 Nutella and 1/2 butter and use coffee for your liquid.... yum...

*when refrigeration is not an option I often use pastry pride as it can stand out longer than cream.

That should give you a few to try.... Good Luck!

I just use it straight and haven't had a problem with it. I do microwave it for about 20 seconds to get it looser, but everyone loves it with chocolate cake. I may try some of the receipes above, it's always good to try to change things up.

I may try the heavy cream with Andes mints, that is also great in chocolate cake but after melting the mints to spread, they get really when put in the refrigerator.

I use Nutella quite often for filling with dark chocolate cakes! I also pop it in the microwave for a few seconds to get it to spreading consistency!

Not really for cakes unless you are making an ice cream cake... but I like to mix vanilla ice cream with nutella till it's like soft ice cream, you can eat it like that or pop it back in the freezer til firm.

Enjoy!!!

If you ever ate a Rochers candy, it's the same flavor. I was told it's made by the same company. Everybody loves my cake with Nutella filling. It also makes a very tasty frosting mixed with buttercream or canned chocolate icing. Yummy!!!! I have a jar in the cupboard. Oh, shoot!!! There goes my diet!!!!!!LOL

this sounds yummy - Andes mints in the middle of chocolate cake? Yum-O! I think melting, speading a thin layer and then having a bit of a crunch when eating the cake would be a nice change of pace..... Another thing to put on my to-do list! icon_smile.gif
