Hi,

Just wanted to let you know that when I count my blessings, on this day; I count you twice!

Here's a very good recipe for cornbread that I hope you enjoy:

Southern Plantation Corn Bread

1 cup butter, divided
4 Tblsp all purpose flour
1 pt half and half cream
4 slices American cheese
1 carton (8 oz.) whipping cream
1 egg, beaten
1 carton (8 oz.) sour cream
2 boxes (8.5 oz. each) corn muffin mix
6 oz. diced breakfast ham or 1-1/2 cups diced ham (optional)

In saucepan, melt 1/2 cup of butter. Add flour and cream; cook until slightly thickened. Crumble in cheese; blend. Cool. Add whipping cream, egg and sour cream; mix well. Melt remaining butter; add butter and corn muffin mix to cheese mixture. Fold in ham. Spread in 13x9x2 baking pan. Bake at 350 F for 50-60 minutes or until set.

Do not overbake-bread should be moist.

Yield: 12-15 servings.

Sounds delicious!!! Too bad I can't try it, as I don't think I can get the corn muffin mix here...

Thank you! I'm very thankful, too, for the great friends, wonderful advice, and the all out fun that I have on this site. I am greatful for the perspective that CC has brought to my life . . . that dirty dishes can be washed tomorrow, that piles of laundry can be sidestepped, that bills can be paid another day (though that one can't be put off too long!) but if you miss a day of CC, you miss out on a wealth of cake info. and that just can't happen!
