Storing Cookie Dough

I just made cookies for the first time and they turned out great! (Uh oh, I feel another hobby addiction coming on icon_lol.gif). I made the NFSC, but I didn't cut the recipe in half like I should have. I have more than enough cookies baked already, but I have a lot of dough left over. Should I keep baking and give cookies away to neighbors or is there a way to store the dough until I bake Christmas cookies in a few weeks?

If you have space, freeze it.

I have a freezer full of NFSC cookie dough waiting for me. I use Ziploc freezer bags.

Also if you are in the mood to roll and cut them out now, I flash freeze my shapes on cookies sheets lined and then covered with wax paper. When they are frozen solid(the shapes) I put them in an appropriate container and seperate the layers with wax paper and put that in the freezer till I need to bake them. When it's time to bake , I put them on the sheet frozen in the oven and it really helps to keep the shapes nice and crisp.

I am getting to the point of considering another freezer just for this purpose.

I agree, Freeze it!! I just roll my extra dough into a log and wrap it in wax paper then wrap it again in a couple of layers of plastic wrap. Just remove it an hour or so before you plan on baking.
I've also gone ahead and cut out and baked my cookies then stacked them in large pans lined with wax paper and wax paper between each layer of cookies then covered with tin foil very tightly and frozen them. As long as your cookies aren't over done to begin with you can take them out of the freezer, let them thaw and decorate them. I was leary of this when I first tried it but it works great and my cookies were still soft and moist. Just don't decorate them while they're still frozen!!

Thanks guys! I'm very relieved that I don't have to bake all those cookies today! Now I can start on Thanksgiving dinner! icon_biggrin.gif
