For me one batch weighs right around 3 lbs, considering there is 1 lb of marshmallows and 2 lbs of sugar (give or take) plus some liquid in there.
When I make fondant for some reason I get balls of powdered sugar throughout my fondant that I have to spend forever picking out. What am I doing wrong!!
I'd say bet on 2 lbs for sure, it's probably more like 2.5. Yep, there are 2lbs of sugar, but it definitely doesn't all make it into the final mmf!
The balls of powdered sugar are because of the moisture when you just dump the marshmallows into the sugar.
That's why I add a bit of sugar to the marshmallows to soak up the moisture. There are no hard bits in the marshmallows by the time it goes into the bowl, and no moisture to MAKE hard bits.
Has anyone tried the strawberry flavored marshmallows to make strawberry fondant? I really want to try it but have no reason right now. Maybe I'll have to make a cake just because.
Okay, then I guess I don't have to make the 7 batches I originally thought I'd have to make!!! I'm such a dummy! I have 4 batches made, so I guess I'm good to go!
I make it the same way and have never had a problem. Glad to know thats how you do it too, I admire your work!! Like I have said before, would love to be where you are some day. Love your website.
Flowergirl, Thank you for posting your how tos for MMF. You totally took away difficultness and the amount of time I perceived it would take to make. I'm going to have to try this, this weekend.

I made mmf for the first time last week. After using the dough hooks I thought my mixer was gonna burn up, it got really thick.
chele_belle: I thought about the strawberry ones too...sounds like a good idea.
Does anyone else remember when they made all the flavored marshmallows like the big ones, not just the mini ones?

I just tried making the chocolate mmf by your directions and ended up with a crubled mess...I had to add quite a bit more water n some crisco... has that ever happend to you?? Anyway, I'm not upset in the least, I tried 2 other recipies 2day n could get NOTHING to work.. this I actually got on my cake!! Maybe its the weather... it is really humid right now..anyway, for future reference, do you know why this might have happened??
I work with MMF alot and have only had a problem once or twice. I believe the problem happened when I over heated the MM in the microwave.
Now I only microwave for 2 minutes in 30 second intervals stiring between each interval.
The two times when I overheated, the MMF kept breaking and ripping, it was really funky.
On another note, does anyone flavor their MMF? What do you use?

When I want color and flavor, I use Kool Aid (then if a stronger color is needed I will add some dye). No color, then use extracts. Works great!

You need to take it out of the bowl when it's the right texture, not when all the icing is gone. I'm guessing you worked too much sugar into it - I never have to add extra water. There's usually quite a bit of extra sugar left over, don't be afraid to just throw it out!
I have used the strawberry marshmallows and I make MMF for all my cakes. They work fine and it tastes good. Just you have a pink mess instead of a white one.
Thanks for the tips! I have yet to try MMF, but am really looking forward to it. I had planned to try it for the first time this week for a cake for dh's birthday Monday, but he said he only wants cupcakes since we have 4 birthdays in less than a month and he doesn't want to make it hard on me. I guess he doesn't see that I enjoy it! Now I need to find an excuse to make MMF, lol!

Wow! It absolutely never occured to me to add color while it was still in the warm Marshmellow stage. And I make MMF quick!

If the mmf gives me ANY attitude, I nuke it for 10-15 seconds until it's nice and soft and bends to my will.
It was right about here that I spit out my coffee and LOL.
I prefer to do the MMF without the mixer, too. I picked up a few tips...thanks for the post!

I just made some MMF last night (it was ivory) and stirring it was so much easier. I didn't need to worry about gloves or anything to keep from staining my hands! I DEFINTELY think this is so much better. Thanks so much!! Although, I did have to switch from the knife to my heavy duty spatula because I could incorporate the sugar in it better at the end (my hand and arm wore out). I must be super weak or something.
Alright, people, now promise me you'll stay glued to CC tomorrow while I roll out my fondant. I might desperately need your help if it gives more "attitude."
I have used the Strawberry marshmallows too and WOW! It was AWESOME! In my photos, it's the pink cake with white/brown flowers........I was lucky to have any fondant to cover the cake because I kept eating little pieces of it. It was like a strawberry tootsie roll. Yummo!
Why can't I copy this recipe? When I highlight there is no copy option. Don't usually have a problem.
After you highlight it, right click and there should be a copy option... If that doesn't happen, highlight and press "Ctrl" and "c" at the same time, that will copy it, then you can paste it to whatever you're going to put it on... or just print out the first page... HTH )
I have used both the chocolate marshmallows and the strawberry. They both worked great! I noticed a little more flavor from the chocolate ones. I didn't have to add any cocoa with the chocolate marshmallows either.
Someone said they flavor fondant with kool aid (sorry I don't remember who). Do you use the little unseetened pakets? What is your favorite flavor? It sounds great!!!@

I have been keeping up with all of your helpful tips.. I noticed to get the tootsie roll taste that hershey's dark cocoa is used.. and I just read that choc marshmallows can be used.. do the choc mm have a good choc taste to them..and could the choc mm be used with the hershey's dk choc.. love the sound of the mmf tasting like tootsie roll.. almost makes me just want to make some and keep it for snacks.. .. I love this board so informative.. hope ya'll have a great day
FlowergirlMN, I can't thank you enough. You make it sound so easy. I have been hesitate to even try MMF until now. Your cakes are beautiful. I love the white on white cake with grapes clusters. Gorgeous!
