wedding cake servings question

hi there.. typically the brides i've been getting are having another dessert served at their wedding vbefore the cake.. how do i determine the #of servings i should make? for example.. i have a bride with 175 guests.. but servign cake at late night, and doesn't want 175 servings, so how many should i charge her for??

Not sure on pricing, BUT maybe you could do a cake that feeds only half of that.. The cake wont be very big, but if you do a stacked cake you could add stryofoam cakes in between the layers to make it look BIG.. Sorry no help on price.

If the bride doesnt not as many servings as guests I would make her make the final decision of how many servings she wants. this way she can not come back and blame you if she felt there were not enough servings.

You may also want to go by the wilton chart, they have smaller servings than earlene's!

I've had several brides come to me with this same scenario. On a regular wedding where cake is the only dessert, I usually tell them to plan cake servings on the 75% of the number of guests they think will be attending, letting them know if there is going to be alcohol served, it will usually be a bit less since guests that consume alcohol typically want salty snacks and not sweets, so they won't eat as much cake. When they tell me they are offering other desserts, I tell them to be safe, they should order AT LEAST for 65% of attending guests, since it is better to have too much than too little. Of course, the bride always has the final say in how big of a cake she wants, but I have them give me a count in writing. This has always worked great for me!

Well you definitely need to charge her for the amount of servings you make, however leave the amount you make up to her. I try to dissuade brides from serving other desserts that way they won't waste a lot of money on either the cake or the other desserts.
