Help With Cake With Dietary Restrictions

Hello everybody,
I just got a call from a lady who wants me to do a cake but has dietary restrictions. Her son is allergic to diary and nuts!

Any suggestions on want kind of cake can I do with these restrictions.? I have never done cakes with dietary restrictions so any kind of help will be appreciated.

Please tell me what are my options so that I could advice her accordingly.

I don't know too much about this, but my friend also has a daughter who is allergic to dairy products. I suggested to her to use coconut milk in a scratch cake recipe in exchange for milk.
That is a start! Hope you get other replies.

There are many very good dairy free recipes on this site. If you ussually work with box mixes the DH devil food or yellow butter mix are also dairy free. Also Smart Balance Light margarine is dairy free and works very good as a replacement for butter in frosting.

If you want to use a boxed mix there is a brand called Cherrybrook Kitchen which does cake mixes suitable for people with foood allergies. I used a mix for both cake and frosting for a friends son who has terrible allergies. The cake came out well and did not taste different to normal cake. I do not live in the US but I would imagine you could get this brand in places like Wild Oats or Whole Foods.

I just made a bunch of cakes this weekend for a lady whose son has these same allergies. I used the Vegan Chocolate cake from this site:

It is a very yummy chocolate cake, you don't even miss the dairy! And then I used an all shortening buttercream...remember not to use milk to thin. I did this this weekend and had to make a whole other batch!

Thanks everybody! For the vegan chocolate cake....it mentions just flour. Is it all purpose flour or cake flour?
