How far in advance can chocolate (from molds) be made? I want to make some this year for Christmas and I also bake cookies so I need to plan my time. Is the 1st week in December too early? Also, how would I store them, in the refrigerator or at room temp?

First week in december is fine. I'm making molded chocolates (and cookies) for Christmas also and I'm starting the chocolate right after Thanksgiving.
