Freezing Cake

ok, stupid question i know but i have never frozen my cakes bafore i decorate..i dont have that much experiance. So my question is do i fill, let settle crumb coat and then freeze or is there another way. And second after i take it out of the freezer do ice it right away or let it thaw? any help would be great.

I freeze all the time and this is what I do personally - but many people do different things.

I freeze the individual layers after I bake them, just wrap in a few layers of plastic wrap then pop in the freezer.

Usually I only have small cakes - 6/8/9" rounds so I will defrost on the counter still wrapped in plastic. They will thaw quickly - in an hour or two. As indydebi once said - it isn't like thawing a chunk of meat.

If I have larger layers - like 12" rounds or a 12 x 18" half sheet, I will fill them frozen (much easier to handle) then let it sit out to thaw before I decorate.

I've read on here that some people have had condensation problems with their icing/fondant if they decorate before they are defrosted but I've never done it so I'm not the best source of advice on that one.

I've frozen and filled many of my cakes. They are so moist when thawed. Almost like aging a fine wine. I do try to thaw them slowly in the refrigerator, the day before decorating. Seems like everything is settled then.

You dont want to try to icing them as as soon as you get them out of the frig its horrible, let them thaw out first i made this mistake on a Birthday cake the icing wanted to slide off the cake i also have filled them then freeze and let them unthawed completley , Hope this helps
