hi
Just wondering how long the cookies last for once cooked? Thinking of making batches for xmas gifts but don't want them to be stale if i make them too soon.

From what I've read, maybe 2 weeks but they start to lose their freshness after 5-7 days. You could certainly freeze them, but I haven't tried that yet. I'd probably freeze them (not frosted).

I have baked in advance and frozen the uniced cookies. When defrosted, they tasted just fine. Baked cookies can last for a while if packaged and sealed properly. My friend told me on Wed (8 Nov) that she just ate the last of the cookies that I had given to her on 25 Oct and they tasted just as good. Those cookies were baked on 23 Oct. Saw her today and she said that there were not ill effects from eating that cookie. Ha! Ha!

The NFSC freeze really well. Just be sure to wrap them well and they'lll be fine. I defrost in the container and ice after they defrost, but I know that some people do freeze already iced ones.

Hi, what about the cookie dough? For how long can I freeze that for? I need to make NFSC for next week but I only need 1 dozen cookies and want to keep the rest of the dough (always comes in handy)
Any ideas? And to defrost, do you do it at room temp or the refrigerator?? Thanks!!

I freeze the cookie dough all the time. Usually I cut out my shapes and freeze them on a sheet so they don't stick together then after they are frozen, I put them in my freezer bags. It's so convenient to have cookies ready to defrost for a short time and then bake. I'm sure the cookie dough would last for months and months frozen.
