I took Pam's class--Chocolate Inspirations I--this past summer. It was great! You'll work really hard, but you'll take home tons of great candy. The ganache fillings that you'll make for the candies are to die for and you'll be able to hand temper chocolate with the best of them.

Go for it and have lots of fun! The best advice I can give you: Use the plastic scrapers--not the metal spatulas-- to get leftover chocolate out of the plastic bowls. I got busted for this several times icon_wink.gif

Thanks for the info!
My sister and I are planning on taking the class together. I think it will be great to come away with so much knowledge and information while having someone close by to discuss and review what we've learned. I'm sure we'll have so much fun.
