I'm on the Great Recipe Search for a good frosting for my birthday cake next month. My problem is that my favorite recipe, which was the least sweet of all I'd tested, is now too sweet itself!!!

What I'm looking for is something that can be made easily (no sugar syrups, please!), tastes fantastic, won't melt in heat, won't chip/crack when cut, and uses less than 1 lb of conf sugar in a batch to frost two 9" rounds, 4" high. Extra brownie points if it can be piped and hold itself well.

I was thinking about the Diabetic Icing that Marknrox submitted; has anyone tried this? Does it pipe well and hold a rose? Would it go well on a white or vanilla cake with a peach & champagne flavor cream cheese filling?

Thank you... I hope someone can help me out icon_biggrin.gif

Good luck in your quest to find that "perfect" icing!! I am curious about the filling you mentioned. Care to share the recipe for that?

It's just a cream cheese filling with drained & chopped peaches and some LorAnn's champagne flavoring. icon_smile.gif No proportions for the peaches or flavoring, it's just "to taste".
