I have been asked by a friend to make her wedding cake. SHe wants pumpkin and banana cake. I think I will use a cake mix for the banana and I need a light pumkin cake recipe. Any guidance would be great. If anyone has a recipes that start with a cake mix it would be a plus..

Also, please rethink the banana cake from a box. I tried stuff that once, and it looked, and smelled, terrible. The cake was pale in color, and the smell was like standing in the middle of a candy factory. It will never enter my door again.

I found this pumpkin cake in Cooking Light, and absolutely love it! It is moist and dense, and just yummy. The taste is close to pumpkin pie, and my family will not let a Thanksgiving (or a Fall season, really) go by without making it.

Edited to add: It is a scratch recipe, but it is super easy!
I had problems finding one so I made my own recipe up. I started with a yellow cake recipe. You could also do the same with a yellow cake mix if you wanted to. Anyways,
4 cups cake flour
1 tbs baking powder
1/2 tsp salt
2 sticks butter softened
1 1/2 cups sugar
4 eggs + 2 yolks
2 tsp vanilla extract
1 1/2 cups milk
1 can pumpkin
2 tsps cinnamin
1 tsp pumpkin pie spice
1/2 tsp ginger
1/4 tsp nutmeg
Cream together the butter and sugar. Add eggs, pumpkin & vanilla. Sift together dry ingredients and slowly add them to the creamed mixture alternating with the milk.
Bake at 350 for 30-35 minutes or until a toothpick comes out clean in the center.
If you want to use a mix, just add an extra cup of cake flour and the can of pumpkin to it. If it comes out too stiff add milk until its the desired consistancy.
THanks everyone..this will be a great help..and don't worry I plan to bake and taste the banana cake before the making the actual wedding cake..I don't want anything that smells or looks nasty..
