Fondant Question

I am attempting my first fondant cake for my son's birthday, August 13th. He want a jungle/zoo theme. I was wanting to sculpt the animals out of fondant, anyways, my question is, How do I store the animals once they are done? I was wanting to start working on this soon, because of all the detail in it. How far ahead will they still be ok? Should they be frozen, or just air dried? Thanks so much guys! I don't know how i survived before this website! icon_biggrin.gif

Let them sit out and air dry until they are hard, then put them in a container out of the light and away from heat. They will store for a rellay time.

I did a cake like this! My fondant jungle animals were on the sides and top of the cake. I modeled them about a week before. As I finished them I stick a wooden skewer into the back so that after they dried I could easily insert the stick and put them on the sides of the cake. To let them dry I put them on a cooling sheet--that way the animal was on the top part and the skewer could come through the cooling rack. Hope that makes sense.

Is 3 weeks in advance too far ahead to make them? Just want to make sure! icon_biggrin.gif

No that is fine. I like to make them at least 1 or more weeks in advance. Especially the biger or fatter ones that take longer to dry all the way through.
