Freezing Cakes????

ok, i have only made one other cake and it was made the night before the party. this year i wont be home the night before the party so i need to know how do i make the cake and freeze it so that it still tastes fresh?? how many days ahead of time can i make the layers?? the party is this sunday and i will need 9 layers ready to put together a 3 tier cake on sunday morning for a party that afternoon. im stressing out here!!!!! icon_cry.gif
should i put it together saturday afternoon? would it still be ok by sunday afternoon? im covering it all in mmf. someone please help!!! thanks!!!

BAKE AND FREEZE EACH LAYER SEPARATELY. Be sure to wrap them well. make all your icing/fondant ahead and you should be fine. when you defrost them dont unwrap them until they are completely unthawed. hope that helps!

I wrap my cakes - each layer seperately- in saran wrap and then in foil before freezing. Then I take them out in time to thaw (if I'm going to decorate in the evening, taking them out in the morning is usually enough time). I leave all the wrappings on until they are thawed out and go from there. I've frozed up to a week in advance and haven't had any problems. No one ever knows if you don't tell them!

I've frozen cakes for a month or two and they were totally fine! I was the one who ate them, so this is how I know for sure, LOL icon_biggrin.gif I bake small cakes with the extra batter and freeze them for later. Just make sure they are wrapped well!
