I need to bake several orders this week, and one of them is cupcakes. Anyone know how long cupcakes will last once they are iced sitting out at room temp? I'm worried about them getting dried out. The customer is picking them up on Thursday night for a Saturday party as is. I'm just trying to figure out a timeline and how far in advance can I make them and have them still be good??

do you think I could bake them on Tuesday to decorate on Wed?

THANKS!!! icon_biggrin.gif

Well, let me first say that I'm much less experienced than others here on cc....

But I think it depends on what kind of cupcakes they are, i.e. what ingredients they have.

I made two batches, one carrot (Toba Garrett's) and one "white sour cream cake" The carrot was still yummy and moist 4 days later; the white was dry after two days.

Sorry I can't be of more help.

Cupcakes cool very quickly. I'd bake and decorate them on the same day. I'd choose Wednesday or Thursday in this case. Personally, I wouldn't want cupcakes to be more than four days old and assume they will eat leftovers on the fifth day.

You could bake them early if you wanted, and just seal them up real good in a plastic bag. But once decorated and sitting out, I've found that cupcakes don't have a very long shelf life. A couple days and the edges start to dry out.
