For those who were asking last week about my sister-in-law and the baby...We had a baby last night!!!!! At 8:55pm, Mia Christine entered the world. 7 lbs. 3oz 22 inches long. It's pronounced Meeah.
ANYWAY.....
I am suppose to do a cake for Thursday, but we are leaving on vacation Monday morning. It's a full sheet cake and this could mean more business for me in the long run. So I don't want to turn it down. My mother-in-law does cakes also and she has frozen a decoratored cake before and doesn't act like it's that big of a deal. I'm nervous about it. I'm afraid my colors will run and just plain nervous. She is willing to take it out of the freezer for me the night before and deliver for me. My question is...We have a finished basement with bedrooms and one of the rooms is our collectable/cake room it is closed off from everything else and gets quite cold in there with the air on. What I was wondering is, if I decorate the cake early Monday morning and put the cake in there would it still be moist and okay for Thursday? How long do you keep a cake out? Would it be better to go ahead and freeze it?

AS LONG AS THE ROOM DOESN'T GET ABOVE 41 DEGREES F. IT SHOULD BE OKAY LEFT IN THE COLD AIR. IF IT IS ABOVE 41 THEN YOU SHOULD FREEZE IT. GOOD LUCK AND CONGRATULATIONS AUNTIE!

I am not sure about leaving it out so long.. I would be worried that it wouldnt be any good. =0(.
If I bake a cake and toss anything left after a few days so I am not sure.
