"scratch" Bakers, Please Help

I am in a real bind...and hope someone can help me. I usually use fluid flex in my cakes (hi ratio shortening) and the distributor who has been stringing me a long for the past two weeks just told me that they aren't getting it in this week. I'm out, and have to bake six cakes this tomorrow and Friday. Can someone please please please give me a recipe from scratch that either uses oil or butter for wedding cakes? I am desperate. Thought I would ask y'all because I need it to be for large quantities. A good yellow or white wedding cake recipe would be very much appreciated. PM me, or e-mail me at [email protected].

We would love to help you, but we need to know if you are working with white cake or a flavor, first.

I just PM'd the recipe for white cake that I usually use. Everyone I have made it for loves it. icon_biggrin.gif

theresa, as I mentioned above, I need a white or yellow cake recipe. No flavor...just need it to use butter, oil or margarine.

Yes, and I have been trying to post some suggestions, but am having trouble with gateway timeouts Again!

Most often mentioned in the threads (to my personal knowledge) are Sylvia Weinstock's Yellow cake (Sweet Celebrations), and Rose Levy Beranbaum's White Cake (The Cake Bible).

Can anyone out there help her by PM'ing her with these recipes?

I use Cook's Illustrated White and Yellow cake recipes. Do a search for 'cook's illustrated' in the Recipes forum and you'll find a few discussion threads about these recipes. Both get great reviews from scratch bakers.
