Need advice please!!!

I was called the other day for a full sheet cake. It is a retirement cake for a day I will be gone on vacation. I have baked and frozen the cake (I freeze all my cakes) but I will have to freeze it again once it is decorated. My mother-in-law (who also does cakes) will take it out of the freezer for me on Wed. night and deliver it on Thurs. morning.
The person who ordered the cake said they want it to say "Happy Retirement Gary" and then gave me things he likes to do like, sports, fishing and hunting, and selling knives. I am at a loss, I can't come up with a way to arrange the cake. I can't put edible images on because of it going back in the freezer, I've heard about some colors bleeding when they defrost so I was afraid to do a buttercream transfer.
I was thinking about putting something like:
Happy Retirement
Gary

more time for...

Pleasegive me ANY ideas you can come up with!!!! I'm about to loose my mind! icon_cry.gif

Hey Missy,
I will try to help you brain storm on the phrase, but nothing coming to mind at the moment,,
but I was told if you freeze a cake that has a transfer or airbrushed that you must seal really good and then when you take it out of the freezer that you have to leave it sealed until completely thawed because something to do with the room temp. and the air will make the colors run.
Hope this helps one of the 2 issuses.

You could try to find plastic figurines depicting the clients taste and interest. When your mother-in-law defrosts it she would have to put the figures on the cake and that's it. Simple and worry-free. icon_lol.gif

I just shudder at the thoughts of freezing a decorated cake....
Good luck on which ever way you decide to go with it..

cakegal.. me too so much potential for the frosting to stick to the wrap and ruin the whole thing :-0

I thought you were suppose to Wrap the BOX not the cake itself. I have never frozen a decorated cake before so I am not sure, just that my instructor told us to wrap the box if you wanted to freeze a decorated cake, and let it thaw completely before letting air hit it. but am also scared to try it. maybe I will do a practice one just to see how it turns out.. hahaha.. never know it might be ok?

YES.... wrap the box with the cake inside! I'd do a trial run too! I've never done it, but I've heard it can be done with some success. Good luck.

Just commenting on one aspect of this, generally with almost any food item, you should not freeze, defrost and re-freeze. There are bacterials risks involved and also a certain amount of breakdown in the molecular structure of the items. I would have no problems with freezing a decorated cake, granted some colours with some icings do tend to bleed out, but re-freezing a previously frozen cake, that would concern me.
