Hi.. I am looking for a tried and true recipe for a mocha frosting. You know the kind that looks like "cafe au lait" that lovely beige color, but has a true mocha flavor. I have been trying to perfect a recipe of my own but cannot get that "coffee" flavor without the frosting getting too dark. icon_cry.gif If anyone has a recipe and is willing to share, I would be truly grateful icon_biggrin.gif

Do you have the Cake Mix Doctor's book? I'm sure she'd have a recipe in there for that type of icing.. I know there is a cafe au lait cake in her book.. I'm sure she'd have an icing to go along with it ... I don't have my book here with me at work and I can't say that I've tried a recipe for it yet... I will say I tried her sour cream chocolate icing recipe and it is just heavenly!! Of course, we won't discuss the calories involved icon_biggrin.gif

One thing you might want to look into is instant esspresso powder. It's found in most grocery stores near the instant coffees. It's wonderful in baking.

It's what Neiman Marcus uses as the secret in their chocolate chip cookie recipe. It's right on neimanmarcus.com now. Just do a search.
