First, let me start off by saying icon_cry.gificon_cry.gificon_cry.gificon_cry.gif

I was making a groom's cake in Lambeth style, and apparently, with the Raleigh weather, my icing became too warm, and the whole back side fell off!!!! I had just finished with the top, and was putting the final touches on! icon_cry.gificon_cry.gif

I put it in the fridge, but does anyone have any other tips for the beginning of fixing this? Is it even salvagable?!!

I just peeked in the fridge - another side just fell off. I've already spent three and a half hours on this, and now I have to start over!! icon_cry.gificon_cry.gif

Is it just the icing that fell off or did the cake break and fall also? If it's just the icing, I'd scrape it off and let the cake sit in front of a fan for awhile to dry out a bit. I've had problems when the humidity is high and the cake is moist, but the icing never totally fell off., it just starts sagging and separating from the cake. Then re ice and start over.

It was just the icing, but done in Lambeth-style, so it had taken me three and a half hours to decorate just the top...

...once the other side fell off, I scraped off everything I had done, re-smoothed the side, and it's sitting now to let the icing set. After that, I'm going to give it another try.

Thank you for replying - it seems either the forums are empty today, or noone else was able to lend a shoulder. This was my first real cake disaster, and I was in tears posting this topic.

Ohhhh Danielle,I hear yah...Take a break and try it again.The humidity always kills such creations..Everything will turn out alright in the end!!

Oh, you poor thing ! I can't imagine my reaction if that happened to me....... you must have put soooo much work in that cake ! I haven't even the nerve to TRY Lambeth........ it is soooo beautiful !! Do you have any in your pics? I'm going to go look....... Try again hon..... ((( HUGS )))

OMG! I don't know what style that is but, it sounds hard! By the time it took you to make it! I am so sorry! And no one was here for you!

I suggest the fan too! Do you have at least one air conditioned room you can do it in?? I know it sounds silly but, when it was almost 90 with the humidity soo high I cleaned my whole bedroom and brought in a separate table to decorate on! it helped some!

I hope you day gets better!

I'm sorry to hear about your frosting. I'd love to offer advice, but I don't even know what Lambeth-style is. Can you explain? Also, what type of frosting are you using?

I am so sorry it has taken awhile to a reply. I know from experience that when you are in tears you need sympathy quick. I am not familiar with Lambeth style. What is it? I am sure you can scrape the frosting off and start over after everthing has set up in the fridge. This happened to me with my very first wedding cake and it sucks. I feel your pain and I will pray for you. It will all work out great!

Welcome to humidity He** im in charlotte so I feel your pain. Ok refridge this cake and then go to the store buy a large jar of apple jelly or you can make a large batch of vanilla simple syrup. Coat that whole cake in melted jelly or syrup then ice you should not have anymore problems. Let the syrup or jelly sit until cool and real sticky: - Lots of love from charlotte

I am SO sorry to hear of your troubles. I have never done a Lambeth-style cake, but I KNOW they look very beautiful and HEAVY! So many layers of intricate piping detail! I am so sorry this has happened to you!!! I am about 45 minutes south of Raleigh and the humidity this summer has been awful! Last summer I had the same thing happen with two different cakes and I was devastated. I have learned to keep my house really cool (it is actually cold -- I had longsleeves on inside this morning) when I am doing cake, candy, etc. That helps a lot with the humidity. I also try to let cakes crust really, really well before delivery.

Sorry for the delay in this post - I have two kids under the age of two, and when I'm not decorating, I'm taking care of them! (Or the other way around) I've calmed down a bit, and thank you all for your kind words and help. I've scraped everything off and I'll be starting over again, as soon as big boo lays down for a nap. I think I'll go with ShirleyW's advice and use Royal icing instead, even though it's not as palatable.

Lambeth-style is very intricate over-piping, to get a hightened effect. I was playing around on the internet when I found the link to a "How To":

Per ShirleyW, it's an americanized method, but still a pretty effect. I decided to try it out for a friend of mine who's getting married on Sat.. Let me just say - it's NOT a method that can be done quickly. Even three and a half hours for just the topd border was not enough. I'm going to try royal icing, not only to get a cleaner finished product, but to make sure it stays where it's supposed to! I'll post pictures once I'm done. I am so sorry this happened.icon_cry.gificon_cry.gificon_cry.gificon_cry.gif i can't wait to see it all finished. I bet it will be wonderful. I myself am learning to cope with the humidity. i.e my plane cake. the frosting cracked the gum paste would not dry.

I'm sure sorry to hear about your disaster but sounds like you're handling it well now. The Lambeth method has been of interest to me for a while but I haven't attempted it yet. Lots and lots of work to it. I don't do many cakes in the summer, partly because of the heat and humidity and partly because I stay so busy with outside activities I love. Come cooler weather I may give the Lambeth a whirl. Good luck on your second time around.

Thank you everyone for your supportive words... I couldn't have made it through this disaster without you. I have re-started the cake, with a royal icing base, and then buttercream on top of that. I really want to keep as much of it as I can buttercream, b/c most people love BC, and not many people like the hard texture of RI. I'll post a picture of it once it's done for those of you who are asking what Lambeth-style is. Keep in mind, the picture I post will be Lambeth-style, not TRUE Lambeth. awww im sooo srry that i had to go through all that,but again im a newbie so i cant really be of much helpicon_sad.gif but i will pray that this time u dont run into any problems,i know what its liek to run into a cake emergency as i jus ran into one today with a veryyy runny cream cheese icing[it SUX]but o well right?good luck this time around!
