can you freeze a fully decorated (in buttercream) cake? and if yes....how do you freeze it without damaging the decorations?? thanks!

People freeze their anniversary or top tier of the wedding cake all of the time! Just put it in a box and wrap the box with plastic wrap several times.

I freeze mine all the time. When I finish decorating, I put it in the freezer for a couple hours. Then when it's completely frozen, I cover it with saran wrap. That way when you cover it, the decorations are already frozen, so they won't get damaged. Hope that helps.

I have a 2 year old and a full time (plus overtime) job and I have no choice but to freeze cakes both frosted and unfrosted. So far, I've had good luck. I try to keep them as covered as possible, but the 3d cakes are quite a challenge! I just keep my fingers crossed.

I actually had the same question last week but didn't get much feedback from it. Glad you brought this up again.

I crumb coated & iced a cake. I wrapped it with saran wrap then with foil & put in the freezer. I hadn't decorated it, just iced & smoothed it. When I needed it I took it out of the freezer & let it sit on the counter for about an hour then took the saran wrap & foil off. The saran wrap stuck to the top messing up my nice smooth top icon_sad.gif
I got a spatula to re-smooth it & the icing lifted right off of the cake! I tried to smooth again but the icing kept lifting off the cake. So I decided to take all the icing off & re-ice it. Well the icing had turned into a whip creamy texture by then. icon_sad.gif So I couldn't use it.

Jscakes helped me come up with this theory... I should have put the cake in the freezer without any saran wrap on it til it is frozen. Then take it out & wrap it with saran wrap then foil.

Now that mhill confirmed our theory I know that's what happened! Thanks mhill~

Now my question... mhill... do you un-wrap the cake before it thaws out or un-wrap it right when it comes out of the freezer? I figure right when you take it out because it could stick to the icing once it starts to thaw right?

I've always frozen crumbcoated cakes just not decorated ones. Now that I have an upright freezer I can freeze all my cakes, this will save me so much time~

Hi TC...

Yes, I unwrap the cake right away when I take it out of the freezer. I learned the hard way. Once, I let a cake with a FBCT thaw while still covered, when I got back home with all the party guests, the black icing ran all over, and you could hardly make out the picture. Bummer. Thankfully it was just for a family memeber (last minute cake).

LOL, I just realized who you were girl! Please forgive me! I'm usually not up this late (so I'm not paying attention to what I'm doing) had to stay up awhile tonight because I've had my ovens on self-cleaning... the firefighter in me couldn't go to bed with them on. LOL~ Can't wait to hear from you~
