I just filled a cocnut cake with chocolate cream filling and shredded coconut. It tasted like a Mounds candybar, very good.

Pineappe...yummm! The cake is also really good if you exchange the liquid for part coconut rum and part water. icon_lol.gif

She just means buttercream icing. It takes a while to get used to all the common abbreviations around here. icon_wink.gif

Yep, I agree on the lime curd. It is excellent, and if you use a meringue-based frosting and sprinkle the top with extra shredded coconut, is is divine!

coconut cake is my favorite cake. My mother made it for me for my birthday for many, many icon_cry.gif years. We always fill it with strawberry jam. It is wonderful icon_biggrin.gif

great now I want a coconut cake!!! How can you go wrong with a chocolate, lime or lemon curd, vanilla, strawberry, raspberry or my personal favorite coconut pudding.

I made a lemon curd and I'm pleasantly surprised thumbs_up.gif And covered the cake with chocolate fudge icing icon_biggrin.gif
