Why Does My Cake Have A Rubbery & Gummy Texture?
Decorating By tana Updated 6 Jun 2014 , 2:50am by sweetkay
Is it mabye cause i baked it to long or maybe it was to much in the mixer? Need some tips... I tried the WASC recipe....
Overbaking would result in a dry cake.
Overmixing can cause too much gluten production and result in a rubbery texture.
Here's a cake troubleshooting chart:

Here's an expanded flavors WASC recipe:

When I make the WASC cake, I mix all the liquid/wet ingredients in one bowl then add the dry ingredients (which I have previously sifted together). Then mix only for the time recommended.
