Why Does My Cake Have A Rubbery & Gummy Texture?

Is it mabye cause i baked it to long or maybe it was to much in the mixer? Need some tips... I tried the WASC recipe....

Overbaking would result in a dry cake.

Overmixing can cause too much gluten production and result in a rubbery texture. icon_sad.gif

When I make the WASC cake, I mix all the liquid/wet ingredients in one bowl then add the dry ingredients (which I have previously sifted together). Then mix only for the time recommended.

hi,

 

how do i knw when im over mixing? only time u can over mix is when ur alternating the dry n wet.. ive tried several vanilla cupcake recepies n none come out fluffly and moist. Ive tried using  oil instead of butter, buttermlk instead of milk, many alterations but no luck.. Can someone give me good advice or recepie...Please... I have my chocolate cupcakes perfect...:(
