How long can you refrigerate NFSC dough before it needs baked? Is a week too long?

I am making cookies for Monday, but want to make more next week as well. I would like to just make a double batch now, instead of getting the mess twice.

i don't think it'd be a problem if you refrigerated or froze the dough... the only issue i can see that might come up is that the dough might dry out, so you'd want to seal it up in a ziploc or something like that before storing for a long period of time.

I would make all the dough, roll it between parchment sheets, and freeze the sheets you don't need. Then when you're ready to do the cookies next week, just thaw the sheets and cut while still cold.

I have been using the great big ziploc bags to freeze sheets of dough and it works well, can't even tell they were frozen!
